"Thanks Steph for all your good ideas and for the "Plan". I'm committed to my 21 days of building up the new habits, especially at night. I'm on to the dairy/calcium issue, too. This is my first day of eating breakfast and having 3 food groups at every meal and I'm excited about it!
I feel really good about having a plan, and having a knowledgeable resource behind it.
Thanks, Coach! "

"Stephanie Nunes changed my life when she contacted me through a friend in 2006. I was sidelined by a running injury and unable to run. I was devastated and Stephanie educated me on what I needed to do with my nutrition in order to get healthy again. She took interest in my situation and offered valuable nutritional advice. She approached my situation with kindess and offered advise weekly throughout my injury. Stephanie graciously took time out of her busy schedule to help a fellow runner in need. Stephanie is a talented runner, loving mother, supportive wife and most of all a good friend. Stephanie has an immense amount of experience in the field of nutrition and I hold all of her advice in high regard. Stephanie helped me get back on my feet again and I am now able to pursue my running career in the most healthiest way possible."

"Dear Stephanie,
I just ran my 4th marathon, and qualified a second time for the Olympic Trials. I want to thank you for the excellent nutritional advice you gave me in preparation for my very first marathon. I've used the nutritional principles you shared with me to sustain my body before, during, and after the long haul. Especially how to utilize the optimal fuel recovery window, post workout. Thanks for helping me reach my goals. I look forward to seeing you again!"

"To Whom It May Concern,

I have had the privilege of working alongside Stephanie Nunes for at least seven years, as she became our primary nutritionist resource for the many cancer patients I worked with at the Marian Cancer Center . In addition to providing outstanding presentations to many of our support groups, Stephanie did phenomenal work with individuals and family members during personal education/counseling appointments.

As an oncology nurse with over 30 years of clinical and administrative experience in identifying and meeting patient’s needs and expectations, I consider Stephanie to be a leader in her field. Some of the reasons I believe Stephanie shines within this niche are outlined below:

Ms. Nunes does her homework. Her teaching sessions (group or individual) utilize the latest research findings, helping her to dispel myths and highlight new findings (based on published scientific evidence).
Ms. Nunes speaks to the level of her audience. She is able to translate the results of her research into terms and examples that all patients can actually use and apply to their daily circumstances. She never speaks over the patients’ heads and insures comprehension by reviewing the plan of care created with the group or patient during the education/consultation.
Ms. Nunes is a “realist.” She works with the patient and family to insure that their real life needs and desires are addressed during the consultation. She obviously understands that it is a major waste of everyone’s time to create a plan of care, or nutritional intervention, that the patient and/or family either will not or can not comply with.
Ms Nunes consistently delivers sensitive, compassionate care. Attuned to details, Stephanie is attentive to the patient or audience’s comfort level. Her ability to treat all patients as if they were her only concern during their time together, increase the comfort level of her patients, and most likely increases their participation and adherence to the final plan of intervention. Stephanie takes the time to ask about factors that will impact the patient’s ability to follow her plan of care, including financial limitations, housing and caretaker arrangements, cooking ability, etcetera.
Ms. Nunes is able to “think outside the box.” Many patients have complex physical, social, and/or other limitations that make it difficult for them to comply with the “ideal” nutritional intervention. She has the ability to help the patient/family prioritize seemingly conflicting issues and create a plan that works for that individual.

I am delighted to have the opportunity to share my assessment of Ms. Stephanie Nunes as an expert in the field of matching practical nutritional counseling with the diverse and often challenging needs of our cancer patients/families. It has been an honor to work with her, and I have personally seen the positive impact she has on her patients and group audiences. Her skills would be invaluable to any health and wellness program!

"As a triathlete, I've always known that nutrition plays an integral role in allowing my body to train and race at full potential and accelerate recovery. However, I did not know what nutrients my body needed, where to get them or how much my body required. Stephanie covered everything! She not only gave me a nutrition plan specific to my needs based on my daily training schedule and race durations, but also educated me about what nutrients I required, why I needed them and which foods contained them. Her thorough analysis, extensive nutritional knowledge, and background as an endurance athlete herself, proves she's the best in the field! I strongly recommend seeking her if you wish to reach that 'next level'."

"I have been racing triathlon for many years and have been a perennial mid-packer for most of that time. This year, after a 2 year layoff I worked with Stephanie Nunes of Rock Solid Nutrition hoping to improve my endurance and recovery time. I finished 4th in my age group at the Los Angeles Triathlon, my first race back, in September. Stephanies program helped me lose those last few pounds and substantially improved my recovery time from hard workouts. Stephanie's programs are very easy to follow and have been easy to work into my daily busy life."

"I genuinely apppreciate your advice. I've upped my carbs and adjusted my meal times I've noted a significant improvement in my performance; especially running. I felt like I had no gas before; while I have a lot more energy now. I am also dropping ~1 lb/week. The difference is really amazing. Like so many athletes, I got sucked into limiting my carbs to lose weight. I think its an unfortunate trend. That said, I appreciate you setting me straight."

"You are awesome. I genuinely appreciate your professional advice and will be passing your name on to several of my Ironman hopeful friends here before I leave. Your advice convinced me to take in far more calories than I had originally planned and it made all the difference. I never bonked and did the whole race with a smile. Thanks again!!!"

"Hi Stephanie, thanks for the follow up. First, I want to say the visit with you was extremely beneficial. I feel like since I have been on a health recovery program I have come across some very high quality individuals, which includes you.

The visit was much different from what I predicted the outcome would be. I did not expect to hear a food increase.I followed your suggestions to the letter; the difference has been (HUGE) I have not been nearly as tired during the day. I would hit several real lows during the course of the day and not understand why this was happening. I did not associate the low energy feeling with lack of food intake. I would say I just feel stronger more alert. I can see the benefit this type of eating adding to my overall strength and endurance."

"Thanks once again for all your help this year. It has definitely made a difference. I can finish my workouts much stronger than I have ever which, more than anything else, increases my confidence. I am excited about the race next weekend and look forward to seeing the results my new nutrition plan creates"

"We are in the midst of the post body comps and so far.......everyone has either lost pounds, inches, body fat or all 3! I'll give you all the results when we have them. But I heard twice today how it's been a lifestyle change for them, how it wasn't a "diet"-----and, that's what our goal was from the start! Jan and I are sooo happy. Thank you so much Stephanie for everything. Best wishes in you new business venture and job! "

"Thank you so much! You really helped me understand the CHO/protein servings and how to implement them into a meal plan and snacks. I have been very motivated to eat healthy and I bought a huge variety of whole grains at Trader Joe's to try. Having a set snack has also helped and now I'm not starving at dinner time. I enjoyed meeting with you and I will definitely let you know how this works and then we can set up another appointment!"

An Awesome story from my favorite client (my husband, best frient, and a Category 1 Master's rider!) Athletes and especially cyclist will enjoy this story....

"Some of you already know that I traveled 15+hours(one-way) to race in the Elkhorn Classic Stage Race. The stage race is an epic 3 day and four stage event. Day 1....81 miles of fun ending on a 5 mile climb. Day 2....10 mile TT in the morning followed by a Criterium in the afternoon. Day 3....101 miles going over 3 climbs (none less than 4 miles in length) and finishing atop a 7 mile journey up Dooley Mountain. The route also had a few 1 mile climbs that were not mentioned in the race route....I guess they were too short to be considered a climb.

I am writing the following report because I feel compelled to. Why? Well, my journey to Baker City and the events that happened during this Stage Race opened my eyes and I want to share it with you all. Maybe you will take something away of value and it will help you. Maybe you think I am crazy and you will not get anything out of it. I don't know, but what I do know is I learned allot about myself and about my "super souigner/nutrition stud/soul-mate".....yep you guessed it Stephanie(my wife).

On paper this race was a disaster however I learned more about myself and my body then I ever did from my successful races. I was sick the entire race but somehow with Stephanie's amazing support I finished. As crazy as it sounds I think I needed to go through this to grow as a cyclist. Everyone has had an experience that makes an impact which is everlasting.....and this was one of those times for me.

Suffering: I learned as a bike rider the true meaning of suffering....I thought I had suffered before...but I was wrong. Stage 1 in Hells Canyon opened my eyes to a new level of suffering....not just the lactic acid burn we are all used to....but the physical side of not even thinking you can make it to the finish. I imploded 55 miles into the 81 mile race. I settled into the second group and within minutes went right out the back of that group .....settled into the third group and again went out the back of this group. I was now solo and had 25+ miles left to the finish line..... into a headwind, 102 degrees and finishing on a 5 mile climb. I wanted to pull over and lay down until somebody picked me up but I was afraid nobody would. I had goose bumps on my arms and legs with 10 miles left. I have never felt this way before and have never suffered so badly as on Stage 1. I lost 15 minutes to the leaders but when I crossed the finish it felt like I won the stage! Suffering is never fun however by persevering leads to growth.

Muscle Memory: I learned that you can finish a stage race even when sick and you can actually put together a good ride on a stage. Muscle memory is a strange thing and the training we do can pull you through a shorter stage....like a TT or Crit. All those training hours on the TT bike paid off and it felt natural to my body. Trust your training to pull you through....just tick the legs over....I ticked them over to a 7th place finish in the TT. That TT was like being on autopilot....my bike just drove itself as I melted into it. Muscle memory is a great thing and comes with consistent training.

Stay in the Present: I learned that you just need to take each race....one at a time...and do everything you can to rest between stages. After each race...I went back to the room and slept. We know how important teammates are during the race however it was crystal clear how important they can be after the race. My teammate was Stephanie and without her I would of never finished the race! She consistently told me " to not worry about finishing the entire stage race but to focus on the stage at hand." Don't think of the end just think of the now and get through it....staying in the present is all you can control.

Teammates: I knew Stephanie was very smart regarding Nutrition....she has been a Registered Dietitian for 12+ years....but this weekend made me realize how good she really is! I know this probably sounds like a shameless plug....she did just start a private Nutritional Consulting Practice.....but it is not! I give Kudos to those that deserve it whether it be a teammate in a race or whatever and she certainly deserves major Kudos! She bought me foods to help boost my immune system and guided me all the way through the stage race. I never once thought about my food she took care of it all. All I had to worry about was getting sleep and putting on my team kit before each stage.
On the last stage (101 miles)she diligently calculated my nutrient needs and laid out the exact amount of Gels and Drinks...etc. She calculated how many bottles I would need to drink and when to intake my gels..etc....it was all planned out for me. I did exactly as she instructed and stuck to the plan and finished the 101 mile road race feeling the best I had all race. I finished 14th on the stage and had the biggest smile on my face when I rode past Steph at 1k to go.....WE HAD DONE IT.....I finished the race! The focus of two individuals working selflessly towards a common goal is very empowering.....true teammates are a special gift!

Thanks for reading and hopefully you can take away a pearl of information or gain some inspiration from my journey to Baker City and completion of this awesome race....."

Keep Spinning and Smiling,

Craig Nunes
